CdcFeb22 - Rebeca Racoon

Gattò di patate

    Gattó di patate is a traditional potato cake recipe from Naples, Italy. This dish is a very tasty pie made with potatoes, mozzarella, parmesan, eggs, ham, cheese, and Italian mortadella. Depending on your taste, you can consume it hot or cold, as a single dish or rich main course. 

I learned this recipe from my roommate in Italy when I was in Turín by the Erasmus and I love it. I wish you enjoy it. 

    INGREDIENTS

  • 500g boiled potatoes
  • 100g Parmesan
  • 100g Smoked cheese
  • 100g ham in a single slice
  • 100g Italian mortadella
  • 100g breadcrumbs
  • 250g mozzarella cheese
  • 4 whole eggs
  • 4 tablespoons butter
  • j.e. salt
  • j.e. black pepper

    PREPARATION

  1. In a bowl, mash the boiled potatoes with a fork
  2. Dice the slice of cooked ham, Italian mozarella, smoked cheese and mozzarella cheese.
  3. Add the cheese, ham, mortadella, smoked cheese, mozzarella cheese, eggs, a pinch of salt and pepper to the potatoes.
  4. Squeezing the ingredients well between your fingers until you have reached a soft but not liquid consistency.
  5. Grease with butter a baking dish and put half of the breadcrumbs. Stick it well on the bottom and all sides.
  6. Put the whole mixture and level it with a dripping pan or fork.
  7. Sprinkle the breadcrumbs and the parmesan over the whole gateau in the baking dish.
  8. Now put a few pieces of butter over the gateau.
  9. Turn on the oven at 180-200°C (350-400°F), when it’s hot, bake and cookthe pie for 30 minutes or until a nice golden crust has been made.
Wait until 10 minutes to serve, smile, and enjoy it!

APPLE  FRITTERS




INGREDIENTS

  • 2 or 3 apples
  • 2 teaspoons of anise
  • 50 grams of sugar
  • 2 eggs
  • 1 packet of leavening
  • 250 grams of flour
  • 2 plains yogurts
  • Cinnamon
  • Vegetable Oil for Deep-frying

 

DIRECTIONS

1.- Peel the apples and cut them into more or less similar squares.

2.- Put he apple pieces in a bowl and add the two cups of anise, sugar and cinnamon. Let it macerate for a while.

3.- In a different bowl mix the 2 eggs, the 2 yogurts, the four, the leavening and the sugar. Mix it well until you  have a homogeneous mixture.

4.- Heat the oil in a skillet covered halfway.

5.- Bathe the apple pieces in the previous mixture. Fry until golden both sides.

6.- Toss with cinnamon and sugar while still warm.

7.- Enjoy!

   Soft and Chewy Gluten-Free Chocolate Chip Cookies

Ingredients (for 20 cookies)



1 + 1/2 cup gluten-free all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder gluten-free
1/3 cup butter-flavored shortening (I used butter instead)
1/3 cup real butter (softened at room temperature)
1 tablespoon coconut oil
1/4 cup white sugar
3/4 cup brown sugar packed
1 egg room temperature
1 egg yolk room temperature
2 teaspoons real vanilla extract gluten free
6-8 oz chocolate chips (reserve some to place on top of cookies before baking)

Instructions

1. In medium bowl, add the flour, salt, baking soda and baking powder, and whisk together. Save it for later.

2. In another bowl, mix butter, coconut oil, white sugar and brown sugar. 

3. Mix in egg, egg yolk and vanilla extract.


4. Gradually add fluor into wet ingredients mixed, until combined.

5. Mix chocolate chips with the mixture.

6. Cover the mixture and chill cookie dough for 1 hour.


7. Preheat oven to 375 F (190 ºC)

8. Roll one-two tablespoons of dough into a ball ( depending on the size of the tablespoon)

9. Place on the cookie sheet and introduce into the oven


10. Bake 7-8 minutes on the middle rack. When the edges are barely golden, remove from oven and let cookies sit in pan for 2-3 minutes.

 Butter cookies



Ingredients:

  • 450 grams of flour
  • 140 grams of sugar
  • 250 grams of unsalted butter
  • 2 eggs
  • Sugar stars! 🌟

Preparation:

  1. Mix the butter, sugar, one egg and one egg yolk.
  2. Add the flour and mix with all ingredients.
  3. Roll the dough and wrap it in plastic. Then chill it in the refrigerator for at least an hour.
  4. Make the shape of the cookies and bake for 15 minutes at 170ºC
  5. Cookies are ready to eat!😍

INGREDIENTS for 10 servings

  • Puff pastry gluten free
  • 4 apples
  • 2 yolks

  • 50 grams of sugar
  • 25 grams of cornflour
  • A bar of chocolate
  • Cashew

PREPARATION 

  1.  Preheat oven to 180 degrees. 
  2. Peel the apples, then core and slice.
  3. In a bowl, add and mix until combined the yolks, sugar and cornflour.   
  4. Put the puff pastry on a mould and then all the ingredents.
  5. Bake pie for 40 minutes or until the crust is golden brown.
  6. Enjoy!

Ingredients

        Filling

  • 500 grams of cream cheese 

  •  2 eggs

  •  10 grams of cacao 

  •  100 grams of chocolate 

  •  40 grams of sugar

Preparation  

1. In a bowl, mix the cream cheese with the eggs.

2. Add to the mixture (1) the cacao and sugar.

3. Bake to 200º C around 45 minutes.

4. On the other hand, thaw the chocolate and, after, add it on top of the cheesecake.

Happy New year


HAPPY NEW YEAR!


As the clock strikes midnight on New Year's Eve, we all hope for a great year, and there are many New Year's traditions which are believed to bring good luck. Here are some of our favourite traditions from around the world.
In Denmark, people jump off chairs at midnight because they believe it's lucky to jump into the New Year. Another Danish tradition is to save your old dishes and plates until the 31st of December, then break them against the doors of your friends and family. If you have a big pile of plates outside your door, you have a lot of friends.
In Belgium, farmers wish their cows a happy new year, and in Romania, farmers try to communicate with their animals. Some people think that it is good luck if the animals respond! Other Romanian traditions include throwing coins into the river and dressing in bear costumes to perform a special dance.
In some South American countries, the colour of your underwear is very important on New Year's Eve. People believe that red underwear will bring love into your life, yellow will bring you wealth and white will bring you peace.
Food plays an important part in New Year's traditions too. In Bolivia, people bake coins into cakes. The people who find the coins have good luck for the next year. In Estonia, some people try to eat seven, nine or twelve meals on New Year's Eve to bring them the strength of that many men in the coming year. In the Netherlands, people eat dumplings or apple fritters on New Year's Eve, and the French celebrate the New Year by eating delicious pancakes.
Some New Year's traditions can be a bit messy. In Switzerland, people drop a little bit of cream on the floor, and in Ireland, people hit the walls of their homes with bread to chase away evil spirits. In Greece, people smash pomegranates against their front doors so that the seeds fall out. Lots of seeds on the floor means lots of luck in the New Year.
Other traditions are quite dangerous. In some parts of Johannesburg, South Africa, people welcome the New Year by throwing old furniture out of their windows. This used to be an Italian tradition, too, although not many people practice it these days.  In Stonehaven, Scotland, people parade through the streets on New Year's Eve swinging balls of fire above their heads. This was originally a Viking tradition.
Some people prefer to start the New Year with a cold swim. In Saundersfoot, Wales, people swim in the icy sea to raise money for charity. In Siberia, people cut a hole in the ice covering Lake Baikal. Then, professional divers dive to the bottom of the lake carrying a New Year's tree.
Every country has its own special New Year's customs. However you chose to start your new year, we hope 2019 will be a happy, lucky year for you and your loved ones.
